Extra Virgin Olive OilNice

Proper Tuscan olive oil: grassy, artsy, a bit rude. Grown on land that everybody else had given up on.

Real olive oil for everyday use, without fancy last names and a castle.

The bon vivant's gem

Tuscan oil is green, grassy, with a pepper burn at the back of the throat. It's generally seen as fancy. We make it for everyday.

Un italiano vero

Italy has had enough mystery oil. We stamp everything on the tin so you know the exact region, cultivars, harvest date, lab tests.

Everything on the tin

Plastic is so 1950s, and makes the worse out of oil. Get your oil in an actual metal can that keeps the taste and healthy stuff intact.

Use it on everything: salad, pizza, stir-frying, roasting, finishing, ice cream. Go crazy!

Olive trees on dry, stony Maremma ground at golden hour

(Keep going)

We decided to leave the city and its novelties so we could take care of old olive trees.

.

The neighbours, the great food, the laughter at the table: they're the fuel to our journey.

Not a family business. The family we chose, and this is our business.

Olente is a collective: a cook turned farmer, a designer-gardener, an actual agronomist (somebody had to know what they were doing) , and a rotating cast of friends who owe somebody a favour.

We rent old groves, or simply take over their care, from old grandpas and grandmas who can't work them any more. We pay in rent, in oil and in sweat.

This is the Maremma, the corner of Tuscany the Etruscans loved and the postcards skipped. The land is rough, but the dinners are long. We prune in February and pick in October: ladders, nets, wasps, cold hands and a banquet every lunch, because life's too short.

We're here to make a living. We're here to have a good time doing it. The trees seem to like it.

The oil

Il Precoce

Our firstborn, and the reason we do any of this. Frantoio and Leccino, picked in the first week of October while the olives are still green and stubborn. Early fruit gives you less oil, but it’s a beautiful, thick one that is just perfect fo everything you can think of.

This is the oil Tuscans keep next to the stove, not a souvenir.
